I admit, I don’t know much about football, but I do know food. For me the best part of watching the Superbowl on television is the halftime entertainment, the commercials and the food. If you’re hosting or attending a Superbowl gathering, avoid bringing foods straight out of snack bags. This is a food event where you can make flavorful hearty foods that complement the frosty beverages. Skip the mini hotdogs and forego the tubs of chips and dips. Homemade chili and cornbread is a substantial meal, a bit healthier and tastes fantastic!

One of my favorite chili recipes is richly flavored with red wine and shallots. It is definitely a crowd pleaser. The combination of this savory chili with sweet homemade cornbread is so tasty, and both recipes are really easy to make.
Red Wine Chili
Ingredients:
1 tablespoon olive oil
2 tablespoons butter
1 large shallot, chopped
1 large garlic clove, minced
1 pound ground beef
1 pound ground pork or veal
1 (1 ¼ ounce) package
chili seasoning mix
¼ teaspoon cinnamon
1 teaspoon red pepper oil
1 (28 ounce) can diced tomatoes
1 (28 ounce) can tomato purée
3 tablespoons beef base,
or 3 cubes beef bouillon
1 (15 ounce) can kidney beans (rinsed)
1 (15 ounce) can cannellini
beans (rinsed)
1 (15 ounce) can black beans
(not drained)
1 (15 oz)can sweet corn kernels
(not drained)
1/3 cup chopped cilantro
2 cups red wine
¼ cup light brown sugar
Melt butter and olive oil in large soup pot. Add shallots and garlic and sauté over medium heat until tender and turning light golden brown. Add ground meats and brown slowly over low heat, stirring often until thoroughly cooked. Add seasonings, red pepper oil, diced tomatoes, tomato purée, beef base or bouillon, beans, corn, cilantro and red wine. Bring to a boil and reduce heat to simmer. After simmering three hours, add brown sugar and stir. Sample the chili. Add salt, pepper and additional red pepper oil to taste.
Sweet Cornbread
Ingredients:
1 ¼ cups sugar
¼ cup honey
2 eggs
½ cup butter (softened)
1 cup buttermilk or half & half
1 cup water
2 cups yellow cornmeal
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1 (15 oz) can sweet corn kernels
Preheat oven to 375°F. Grease a 9x13 inch baking pan with butter. Mix cornmeal, flour, baking powder, and salt in a bowl and set aside. In a large bowl mix sugar, butter, eggs, buttermilk, honey and water. Slowly add the flour mixture to the large bowl and mix thoroughly. Dough will be lumpy. Stir in corn kernels. Pour into greased pan. Bake for 25-30 minutes or until golden brown on top. I
