"Arabesque: A Taste of

The very first couscous recipe I ever used back in the 1970s came from a Claudia Rhoden book. Rhoden, Elizabeth David and Tatti Clafin were my Mediterranean food gurus. In her new book, "Arabesque: ATaste of Morocco, Turkey and Lebanon" ($35), Rhoden invites us to sample 150 recipes from the Levant and North Africa. This array provides a great introduction to the wonderful variations of old standbys and lesser-known specialties: tagine to couscous, kisir to mette, including recipes Rhoden has recently discovered. Throughout the book are brief essays on ingredients, customs and culinary history, including the story of how recipes have traveled with emigrating people, enriching the cuisines of Europe and the Americas. One of the most appealing of recent cookbooks.
